For Shrove Tuesday or just for breakfast or dessert, here's a brilliant green pancake recipe that's simple and delicious.
160 ml milk (dairy, soy or coconut)
2 tbsp unrefined sugar (or agave or maple syrup)
1 tsp vanilla extract
340g flour (use coconut flour as a healthier option)
2 tbsp Matcha green tea powder
1 1/2 tsp baking powder (optional if you want extra fluffy pancakes)
pinch of salt
Add the flour, eggs, milk, sugar/syrup, vanilla, Matcha, baking powder and salt to a bowl and whisk together until nice and smooth.
Heat your pan to medium and add butter or coconut oil. Add a ladle-full of the pancake batter to the pan. Let it bubble up on top and then flip it (if you are fearful of flipping, use an appropriate utensil to turn it over). Cook for a 1 - 2 minutes on the other side, you can lightly touch the pancake to check if has fully set.
Serve with whatever blows your taste buds away.
Serving: 2-4 people.
